Last year I was diagnosed with a gluten sensitivity, and for me this was a great diagnosis, finally I knew what was making me feel so sick all the time! The problem, was trying to figure out my triggers since not all food with gluten set off a reaction, strange, I know.
So, for the last year, I have been experimenting with trying new gluten free products that I have found and came up with a quick and easy dessert to satisfy my sweet tooth. Trying to build on the foods that I already loved, and incorporating something new, I came up with what I like to call Strawberry Yogurt Parfait.
Ingredients
Vanilla or Plain Yogurt
Strawberries, fresh or frozen
Udi’s Gluten Free Vanilla Granola
(There aren’t any measurements for this recipe, I just adjust to my hunger at the time 🙂
Slice a few strawberries and place them in a bowl. Mine were frozen, so I defrosted them. They look a little smooshed, but they are still delicious.
Add as yogurt to taste, or to appetite, and stir.
Sprinkle Udi’s Gluten Free Vanilla Granola on top and enjoy!
How easy was that? It is so easy you will want to try different flavors of fruit and yogurt or other varieties of Udi’s Granola. I am going to try the Cranberry Granola next since I have never had that flavor and it sounds amazing!
