Breakfast is the most important meal of the day!

Even though I know that saying to be true, I still have a hard time getting myself to eat anything in the morning, I am usually just a a cup of coffee kinda gal.  I know that a lot of people are in the same boat, either they don’t have enough time in the mornings to make breakfast or they just don’t feel like eating.

I found a recipe that I have made in the past, that helps me eat in the morning, saves me time, and is delicious and filling.

Turkey Sausage, Veggie and Egg Muffins

To make my Turkey Sausage, Veggie and Egg Muffins, I use Jimmy Dean Fully Cooked Turkey Sausage Crumbles. They are easy to prepare, taste amazing, and save a ton of time. You just throw them in a pan and in a few minutes you have a delicious addition to any meal, not just breakfast.

*TIPMake this recipe the night before to save even more time the next morning.

Once the sausage is half-way cooked, I add some mushrooms and peppers and cook until they are warmed through since I like a little crunch to my peppers. You could totally add whatever veggies you would like to the mix such as onions, broccoli, peas, whatever it is you like to eat. Cheese would be a great addition, I opted to leave it out for diet reasons, but it would be yummy!

Once you have all your crumbles and veggies cooked, it’s time to assemble the muffins. I used a standard muffin pan, sprayed it with some non-stick spray and added my Jimmy Dean sausage crumble and veggie mixture. As you can see, I didn’t skimp on the filling.

I used Egg Beaters for the next part but you could use real eggs beaten up and seasoned the way you like. I also filled each well to the top, I wanted them to cook a bit over the top. Place in the oven for 25-30 minutes at 350 degrees and you have a quick and easy breakfast……

I love how easy this recipe is and how easy it is to just grab in the morning and throw in the microwave. Now there is no excuse to not start the day off right!

  • Jimmy Dean Turkey Sausage Crumbles
  • Egg Beaters – 2 small cartons
  • Peppers chopped
  • Mushrooms
  1. Pre-heat oven to 350 degrees
  2. Cook sausage on the stovetop per package instructions (about 4 minutes then add veggies)
  3. Add mushrooms and peppers and cook to your liking
  4. Fill muffin tin with sausage mixture
  5. Pour Egg Beaters over each well
  6. Bake for 25-30 mins
