Garlic Shrimp and Asparagus Spring Rolls
Ingredients
- 1 Bag of Frozen Shrimp defrosted and tails removed (could use fresh)
- 1 teaspoon chopped garlic
- 1 teaspoon olive oil
- Fresh Asparagus
- Lettuce (I don’t suggest using iceburg)
- Spring Roll Wraps
Instructions
- Steam asparagus and set aside to cool
- In a frying pan add olive oil and shrimp
- Stir fry for 4 minutes and add garlic
- Remove after 1 minute and set aside to cool
- Prepare lettuce by shredding or ripping into pieces, set aside
- In a deep lid or flat container, add very hot water from tap
- Place one Spring Roll wrap into water until pliable
- Use a cutting board and lay Spring Roll flat
