Finding items to add to my diet is a persistent struggle. Dealing with multiple health issues, particularly Celiac disease, means I must strictly avoid gluten. Even though there are many flour substitutes on the market, I love testing out obscure varieties like breadfruit flour.
Breadfruit is a large tropical fruit, weighing one to four pounds, that, when cooked, takes on the texture and flavor similar to freshly baked bread or potatoes. It is also a major food staple in the Pacific Islands and the Caribbean.
Amasar, a company founded in Jayuya, Puerto Rico, and led by Marisol Villalobos, a scientist and former chemistry professor, and Jesús Martes, a chemical engineer and former pharma executive, was kind enough to send me some breadfruit flour to try out.


Breadfruit flour is high in natural fiber, has 3 grams of protein per serving, is gluten-free, plant-based, and allergen-friendly. I also love that it has no added sugars, preservatives, gums, or emulsifiers.

I have been really missing those classic treats like cakes and cookies, so I thought a cake would be the perfect way to test out the breadfruit flour! I found a fantastic recipe right on the back of the flour bag for a carrot and walnut cake that sounded absolutely delicious. My son, who truly loves to spend time in the kitchen, offered to whip it up for me and even had the great idea to toss in some dried cranberries for a little extra flavor. We were both so pleasantly surprised by how well it turned out; it was perfectly sweet, had just the right amount of savory, and was so moist that we didn’t even feel the need to add any frosting!
Another thing that I noticed is that many gluten-free flour blends really struggle to rise properly, often leaving the finished product feeling dense or flat. That was not the case with the breadfruit flour; it completely exceeded my expectations in every way. It is such a game-changer for my kitchen, and I am so excited to see how it performs in other recipes.
