I stumbled upon this recipe while trying to figure out what to do with the chickpeas I had soaked over night. I loved it so much, I thought I would share.
4/5/10 I tweaked the recipe recently and instead of the recipe below, I coated the chickpeas with a tablespoon of Teriyaki with Sesame and OMG they were even better than the original recipe. Get creative and start adding your own flavors, I bet barbecue sauce would be awesome too!
Roasted Chickpeas
- 1 can or 2 cups of soaked & boiled chickpeas
- Garlic Powder
- Grated Parmesan
- Olive Oil
- Seasonings – Your choice
Preheat oven to 425 degrees. Drain chickpeas and lay out on a cutting board to dry some. Add olive oil to coat, then sprinkle in garlic powder and any other seasonings you like. I used dried Italian seasonings and sprinkled Parmesan to coat.
Place on baking sheet and roast for 30 to 40 minute’s. Keep checking to make sure they don’t burn. They should be golden brown and have a crunch when you bite into them.
They are nice high protein snack and sort of taste like a nut. Enjoy!
