I have started incorporating more and more veggies into my diet, and each time I go to the grocery store I pick out a new one to try. One of my favorite finds is kale, I love it! I have steamed it, made it into chips, put it in soups and used it in salads.

Sautéed Potatoes and Kale
Ingredients
2 Tbsp. I Can’t Believe It’s Not Butter!® Spread
1 lb. red potatoes, cut into 1-inch chunks, (about 4 cups)
1 cup chopped onion
1/4 tsp. salt
8 ounces kale, trimmed and chopped, (about 6 cups)
Directions
Melt I Can’t Believe It’s Not Butter!® Spread in large nonstick skillet over medium-high heat.
Add potatoes, onion and salt; reduce heat to medium and cook covered, stirring occasionally, until potatoes are tender, about 15 minutes.
Add kale and cook, stirring frequently, until kale is wilted and tender, about 3 minutes.
