Easy Baked Scotch Eggs

You will need:
  • 6 hard boiled eggs
  • 1.3 pounds of ground pork sausage (I used Italian)
  • 1 teaspoon minced garlic (you could also use minced onion)
  • Salt and Pepper to taste

Directions: 

Heat oven to 400°F.

Prepare a baking sheet with aluminum foil.

In large bowl, mix pork sausage, garlic, salt and pepper. Shape into 6 equal patties.

Place egg on sausage patty and shape sausage around egg until fully covered.

Bake 35 minutes or until sausage is thoroughly cooked (no longer pink).
