National Hispanic Heritage Month is observed yearly from September 15 to October 15, by celebrating the histories, cultures and contributions of American citizens whose ancestors came from Spain, Mexico, the Caribbean and Central and South America.
In honor of National Hispanic History month, I was sent products from both IMUSA and Goya to create a recipe to help my family celebrate. I love cooking and even more, I love creating recipes.

So with all these great items I decided to make a Chorizo and Black Bean Soup using the Goya black beans, chick peas, and olive oil. When I make things off the cuff I usually just wing it and add things that I think will taste good. Here’s how the dish came together…

Chorizo and Black Bean Soup
Ingredients:
- Goya olive oil
- 1 medium white onion chopped
- 2 carrots diced
- 1 tbsp chopped garlic
- Chorizo, 1 link
- Beef Stock 64 ounces
- 15.5 oz. can black beans, drained and rinsed
- 15.5 oz. can chickpeas, drained and rinsed
- 1 cup frozen corn
- juice from ½ of a lime
- 1 tsp garlic powder
- 1/2 tsp crushed red pepper flakes
- salt & pepper

Heat olive oil in a large pot like the IMUSA Ceramic Caldero over medium heat. Add Chorizo. Cook down breaking up into smaller pieces until fully cooked. Drain chorizo and set aside.

Add olive oil, chopped onion, carrots, salt & pepper and stir. Cook until the onion is slightly translucent then add the garlic and chorizo. Cook a few minutes making sure garlic does not burn.

Add the black beans, chickpeas, and corn and generously season with more salt and pepper, garlic powder and crushed red pepper flakes to taste.

Cover, reduce heat to low, and cook for 25 more minutes, stirring occasionally.
Add a squeeze of lime.
