One of my most favorite memories growing up were the big Sunday night dinners during the Summer. All of those memories of sitting out on the picnic bench waiting for my Dad to get home from work will always stay with me. As a Mom myself, I want to create great memories for my children by having our very own big Summer Sunday night dinners.
One of my Moms specialties was meatloaf. It was always so delicious and something that makes me always think of her when I make it. Now with meatloaf, you will run into people that either love it or hate it. I think it all depends on how you make it. Of course, if it’s just a huge chunk of bland meat not many people are gonna want to eat that. I decided to come up with a recipe that incorporates a Summer family favorite: Bacon Cheeseburgers and make my Bacon Cheeseburger Meatloaf. This way, we can all sit at the table and enjoy our “cheeseburgers” as a full meal.
The cheese portion of this recipe can’t be just any cheese, it has to be Heluva Good!®, pun intended. We are a family of cheese lovers, so honestly, I could add cheese to almost anything and my family would eat it up. We always have cheese on hand for snacking on with crackers, melting on tortilla chips and sandwiches or just straight out of the package. My favorite lately, is the Heluva Good! Jalapeno Jack, I could snack on that all day!

Heluva Good! Cheesy Bacon Meatloaf Recipe


- 2 lbs ground beef
- 1 cup of cubed Heluva Good! Cheese Sharp and Special Reserve Extra Sharp Cheddar (use whatever flavor you would like)
- 2 eggs beaten
- 1/2 cup milk
- 1/2 cup ketchup
- 1/2 cup mashed potato flakes or bread crumbs
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp pepper
- 8-12 slices of bacon
Preheat oven to 375 degrees F.
Combine the ground beef, potato flakes, eggs, ketchup, milk, garlic powder, salt and pepper, and mix well.
Place meat into a 14×18 inch rectangle pan and shape, keeping away from sides. Poke holes all over the top to prepare for the cheese.
Insert cheese cubes by pressing down into the meat, about half way down. Be aware that some of the cheese will melt into the meat, leaving it super moist.
Pat the meat to seal the holes so the cheesy goodness stays inside.
Lay bacon strips over the meatloaf trying not to overlap. I used 8 slices but it depends on how much meat you use and the size of the bacon you use.
Bake in the preheated oven 70 minutes, checking to pour off grease every 20 minutes. *There will be lots of run-off, so place a baking sheet under the dish while baking.
Bake until the internal temperature reaches 165-170 degrees F. I broil during the last 5 minutes to crisp up the bacon.

**TIP – To make a lighter version of this recipe, substitute the ground beef with ground turkey, and the bacon for turkey bacon. Cooking times may vary.
