Gluten-Free Pasta with Pesto and Baby Kale
Ingredients
- 1 lb gluten-free pasta
- 3 cups kale (baby)
- 1 teaspoon chopped garlic
- 1 teaspoon pesto
- 1/2 cup roasted red peppers
- 1/2 cup grated Parmesan cheese
- 1/2 cup grape tomatoes sliced in half
- pepper
- salt
- Instructions
- Cook pasta per box instructions, drain, and set aside
- Bring a medium pot of salted water to a boil, add kale and cook for 3 minutes
- Drain and squeeze out water
- In a large bowl add pasta, kale, garlic, pesto, red peppers, salt and pepper and toss to coat
- Serve and garnish with Parmesan cheese and sliced grape tomatoes
