Gluten-Free Pasta with Pesto and Baby Kale

Gluten-Free Pasta with Pesto and Baby Kale
Ingredients
  • 1 lb gluten-free pasta
  • 3 cups kale (baby)
  • 1 teaspoon chopped garlic
  • 1 teaspoon pesto
  • 1/2 cup roasted red peppers
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup grape tomatoes sliced in half
  • pepper
  • salt

 

  • Instructions
  1. Cook pasta per box instructions, drain, and set aside
  2. Bring a medium pot of salted water to a boil, add kale and cook for 3 minutes
  3. Drain and squeeze out water
  4. In a large bowl add pasta, kale, garlic, pesto, red peppers, salt and pepper and toss to coat
  5. Serve and garnish with Parmesan cheese and sliced grape tomatoes
  6. ADD IN
  7. Chicken or sliced steak
