I have finally gotten my husband on a low-carb diet so we are eating lots of lean meats and seafood. Seafood is a great source of protein and very low in calories so it’s a perfect addition to any meal plan.

Sitka Salmon Shares reached out to me earlier this year and wanted us to try their wild-caught seafood from the waters of Southeast Alaska and the North Pacific, and of course, I said yes. I am from Maryland, we are a seafood-loving state, so I am all about it!

They sent me a box of Alaskan Pacific Cod to try. Honestly, I don’t think I have had cod since I was a kid when my mother made it, so I was happy to come up with a recipe to try it. Here’s what I made with this April’s box of Alaskan Pacific Cod…….

INGREDIENTS

  • 4 fresh Cod filets *I cut two large filets into four
  • 1 bag of plain pork rinds *I used a 3.25-ounce bag
  • 4 tsp avocado oil
  • 4 tsp garlic powder
  • 2/3 cup grated parmesan cheese
  • salt and pepper to taste *be careful of the salt since the parmesan is salty on its own

 

INSTRUCTIONS

Prepare a cooking sheet with parchment paper and heat the to 425 degrees.

Add pork rinds to a plastic bag, seal, and crush using a rolling pin or any kitchen item you can use to crush them finely. Then add garlic powder, grated cheese, salt, and pepper to the pork rinds and shake to combine.

Coat each filet of cod with avocado oil making sure to cover both the front and the back. Place cod in pork rind mixture and shake to coat. You may need to add some coating to each piece once on the pan.

Place in the oven and cook for 25 minutes.

Serve with fresh veggies, a salad or any side dish you desire. Just look how flakey the cod is!
