Back To School with Mission Tortillas

School is on everyone’s minds – I am a homeschool Mom and one of my main dilemmas is fixing nutritious lunches to keep my kids energized enough to get through the day.

Mission – Back To School initiative makes it easy for me to come up with new, fun and interesting foods to keep my kids happy.  Think about the tortillas, you could put virtually anything inside and make a healthy wrap. In fact, my youngest, who is crazy picky, likes to take a slice of cheese and a hot dog and wrap it up in a Mission flour tortilla, therefore creating a “hot dog” burrito! My oldest has even put broccoli in one and made a “broccoli burrito” – yeah, no need to say it, that’s pretty weird LOL. BUT it was fun for them trying to come up with their own creations.

We like to incorporate food in our curriculum, and teaching the kids about where food comes from, how it’s made and having them make their own creations is not only educational but also fun. Try it with your kids whether you homeschool like us or not, they will have a blast trying to come up with all kinds of new concoctions.

Personally, I like just a plain wrap kind of creation like turkey and cheese or maybe some tuna salad. It’s easy to make and portable too, so I can run around the house with it in hand cause I always seem to be eating on the run these days. Another great way to enjoy tortillas is for breakfast – take a tortilla and add scrambled eggs, cheese and bacon and you have a great breakfast wrap and again, it’s portable so you can take it to work or wherever you need to go.
