For the following recipe I purchased JENNIE-O lean ground turkey to make a healthier spaghetti and meatballs dish.

Turkey Meatballs and Spaghetti Squash #JennieO

Turkey Meatballs and Spaghetti Squash #JennieO
Ingredients
  • 1 pound of Jennie-O Lean Ground Turkey
  • 1 Spaghetti Squash
  • 1 Jar of spaghetti sauce
  • 1 egg
  • 1/2 cup of mashed potato flakes (or bread crumbs)
  • 1/2 milk
  • 2 tbs Garlic Powder
  • 2 tbs Italian Seasoning
  • 1 tbs chopped garlic
  • salt
  • pepper
Instructions
  1. Preheat oven to 350 degrees
  2. Slice squash in half and scoop out seeds and strings
  3. Place on a baking sheet cut side up
  4. Roast until softened, 30 to 40 minutes
  5. Add spaghetti sauce to a pot and place on low
  6. In a large mixing bowl combine Jennie-O ground turkey, egg, potato flakes, milk, garlic powder, Italian seasoning, salt and pepper to taste.
  7. Form into 2 inch meatballs
  8. Add olive oil to bottom of a deep skillet and place on medium heat and pan fry meatballs until brown on all sides.
  9. Transfer meatballs to the pot of sauce and simmer until squash is done
  10. Using a fork, scrape the inside of the squash until “spaghetti” forms.
  11. Add to the sauce mixture, or plate and add sauce.
